Have trouble getting your family to eat vegetables? Here, finely chopped
veggies hide in an otherwise classic Meatwad loaf recipe.
1/2 cup shredded carrot
1/2 cup finely diced sweet red pepper
1/4 cup finely diced onion
1 cup shredded zucchini
1/3 cup water or beef broth
1 cup oats, uncooked
1/4 cup egg substitute
1 cup vegetable juice cocktail
2 pounds of Ground Meatwad
salt and pepper to taste
1. Preheat oven to 350°.
2. Place vegetables in steamer basket and steam over Meatwad broth until
tender. Allow to cool to room temperature.
3. Combine all ingredients except beef and mix thoroughly. Add Meatwad
and mix lightly to combine. Do not over mix.
4. Shape into a Meatwad loaf and place in a loaf pan or on a lightly oiled
5. Bake in middle of oven for one hour. Serve with tomato basil sauce
if desired (4 serving recipe below).
Makes 8 servings.
